Bourdon & The Beast

After Top Chef Kentucky contestants, Chef Brian Young and Chef Justin Sutherland hosted a live butchering demo of a Beeler Pure Pork pig at Handsome Hog on January 14th, the two got to work prepping the pig for the Bourbon and The Beast six course dinner the following Thursday. The house was packed and the guest were pleased, check out what was on the menu!


1st course:

Family Style Charcuterie Board



2nd course:

Italian Wedding Soup

black-eyed pea parmesan agnolotti, polpetti, brodo, and winter vegetables


3rd course:

Walnut Porchetta

squash butter, brassicas, lemon, thyme, fig, romanesco, and sumac


4th course:

Po Ping Pork

kumamoto oysters, po ping pancakes, fragrant flora, fermented black bean and walnut condiment


5th course:

Olive Oil Pouched Pork Loin

smoked oyster mushroom, truffle laganega, black walnut vinaigrette, and pork fat confit apple


6th course Sweetmeats

smoked dark chocolate semifreddo, smoked cherry bourbon sauce, caramelized white chocolate, and whip
